Potato and Sauerkraut Salad with Italian Dressing

  This is a warm sauerkraut salad I happened to attempt one day that turned out pretty well. It's similar to the idea of a German potato salad with the added benefit of the probiotic and prebiotic properties of sauerkraut.

Ingredients:
Potatoes - 500g - 1 kg, cubed (waxy and all purpose potatoes are the best)
Sauerkraut - 500g - 1 kg, well drained
vegan Italian Dressing - whatever you prefer (store bought / homemade)

Preparation:
Simmer potatoes until tender and easily poked through with a fork or knife being careful not to over cook. Drain well and in a large bowl add the potatoes with the drained sauerkraut and then add the dressing to taste and mix well. Best served immediately while it is still warm.
