What is Sauerkraut?

Don't know what sauerkraut is? I'll explain. Sauerkraut is fermented (pickled) cabbage.

The word sauerkraut is German and literally means sour cabbage. There are other names for sauerkraut, for example in Polish it is kapusta kiszona which means pickled cabbage. In French it is choucroute.
It is actually a common food in much of the world, appearing in different forms. Kimchi is one example of a type of sauerkraut. It is also common for sauerkraut to be made with spices or other vegetables added for color, flavor, and additional nutrition.

Sauerkraut is believed to have strong roots in being used as a means to continue intake of vitamin C through winter months in cold parts of the world. It also has a history in being used to treat ailments and promote digestion and acts as a very powerful probiotic and prebiotic.
